How far of a size of a jet do u have to go down by? For example, if i have a pilot jet of 52, should i get a 51 jet or a 41 jet?

i am testing for the main jet and i did a long strait with an old plug and the color of the insulater was a mocha brown like the guide says it should be. but then i tried it with a new plug and the color of the insulator was basically still white with some gray. very confused???? is my mian jet good or do i need to change????
